Barbecued Blueberry Dessert

This simple and delicious version of a down-east dessert is “baked” on the barbecue. Serve warm with ice cream or frozen yogurt.

4 cups (4 L) fresh Ontario Blueberries
1/3 cup (75 mL) orange juice
1/4 cup (50 mL) Ontario Liquid Honey
1/2 tsp (2 mL) cinnamon

1 cup (250 mL) all-purpose flour
1/4 cup (50 mL) granulated sugar
2 tbsp (25 mL) cornmeal
2 tsp (10 mL) baking powder
1 tsp (5 mL) grated orange rind
1/2 cup (125 mL) milk
1 Ontario Egg
2 tbsp (25 mL) butter, melted and cooled

Place blueberries in ungreased 8-inch (2 L) square metal cake pan (or use double thickness disposable foil pans). Pour orange juice over blueberries. Drizzle with honey and sprinkle with cinnamon.

In large bowl, combine flour, sugar, cornmeal, baking powder and orange rind. In small bowl, whisk together milk, egg and butter; stir into flour mixture until combined. Spoon evenly over blueberries. Place on indirect heat of 350°F (180°C) grill. Close lid and bake for 40 to 50 minutes or until golden brown. Let cool slightly before serving.
